Blend 2 1/2 cups sugar and 1 cup oil together. Add 3 eggs one at a time while beating. Combine 3 cups flour, 2 teaspoons baking soda, 1 teaspoon cinnamon and 1 of nutmeg, 1/4 ground cloves, and 1/2 teaspoon salt. Add egg mixture to 15 ounces solid-packed pumpkin, adding a little at a time, and then to the dry ingredients. Bake for 60-65 minutes at 350 degrees, cool for 10 minutes before inverting it to wire rack. Cool and sprinkle with confectioners’ sugar, and celebrate pumpkin season in style.
Spice Cake Bars with Salted Carmel Icing
Combine spice cake mix, 3/4 cup melted butter, 1/3 cup evaporated milk and 1 large egg. Beat for 2 minutes and transfer to a 13×9 prepared pan. Bake at 350 degrees for 15-20 minutes, remove and cool in the pan. Combine 1/3 cup brown sugar, 1/3 cup evaporated milk and 1/4 cup cubed butter over medium heat to a boil. Reduce and simmer for 3 minutes, and then add 2 cups confectioners’ sugar and 1 teaspoon vanilla. Immediately spread over cake, sprinkle with salt, and let cool before cutting into bars.
